One of my favorite dips to serve for a party or for taco night is salsa, but what's more fun is to kick it up a notch by making Black Eyed Peas Dip!
This Southwestern dip recipe, also known as Texas Caviar or Cowboy Caviar, is fun, flavorful, and quick to make in just 5 minutes.
Every time I serve this dip to friends, they want to know the recipe! It's zesty, with plenty of flavor, and has a great texture for dipping chips or serving with Steak Nachos.

What is Texas caviar made of?
Texas Caviar, also known as Cowboy Caviar, uses a mixture of black-eyed peas, celery, cilantro, sweet yellow corn, green pepper, red pepper, onions, pinto beans, black beans, zesty Italian salad dressing, and salt and pepper. This gives it a flavorful, zesty taste perfect for pairing with tortilla chips.
Do you drain the beans to make black eyed peas dip?
The black beans, pinto beans, and black-eyed peas should be drained before making Texas caviar.
Is this recipe gluten-free?
While most Italian dressing should be gluten-free, it is still best to check the bottle before using it in this recipe. Otherwise, this is a gluten-free Texas caviar recipe everyone can enjoy!
How long is Cowboy Caviar good for in the fridge?
Homemade black eyed peas dip is good for 4-5 days when stored in an airtight container in the refrigerator.
Cowboy Caviar Ingredients
- Black-eyed peas, canned, drained
- Pinto beans, canned, drained
- Black beans, canned, drained
- Zesty Italian salad dressing
- Celery, finely diced
- Green bell pepper, finely diced
- Red bell pepper, finely diced
- Small onion, finely diced
- Cilantro, chopped
- Salt and pepper
Black Eyed Peas Dip Instructions
- Finely dice celery, green bell pepper, red bell pepper, and onion. Chop cilantro. Drain canned black-eyed peas, pinto beans, and black beans. Add these ingredients to a bowl.
- Gently mix, then add Zesty Italian salad dressing and salt and pepper. Mix through. Taste and add additional seasoning if desired, then serve and enjoy!
Recipe Tips
- You can add a kick of heat by adding diced jalapenos to the mix!
- Cilantro is optional. If you don't want to use cilantro but are missing out on the fresh herbs, try using fresh chopped parsley instead.
- Letting it sit overnight gives it a stronger flavor. Allow the dip to rest in the refrigerator overnight to develop the flavors even more!

- 1 Green pepper
- 1 Red pepper

- 1 teaspoon Salt
